We didn't invent this food. The street did.
Every dish here has a home before Kanteen — a thela on Burns Road, a bench outside a Boat Basin gol gappa stand, a chai wala who's been at the same corner for twenty years. We just gave it a proper seat, a clean kitchen, and a menu that doesn't cut corners. Same chaska. Same crowd energy. Just no more eating standing up.
